Rainbow Dash My Little Pony Cake

Vanilla Cake and Rainbow Buttercream!

I used to spend hours brushing my My Little Pony's hair. What fun! There was something so satisfying about it. I had no idea that one of my favourite childhood toys had become such a cult classic! I personally think Rainbow Dash is the coolest, but that's just my opinion. And I couldn't resist turning her luscious rainbow locks into CAKE! I used ropes of rainbow fondant, carved vanilla cake, and delicious rainbow buttercream. Cake and rainbows. What more could a girl ask for?

*Cake Tip: Before carving your cakes, chill them for a while! This REALLY helps when carving to make sure your cake doesnt crumble and fall apart. A warm cake is tough to carve. When your cakes are nice and chilled, carve the shape of your pony using your cardboard template.*

Preparation

Prepare Cakes

Prepare your vanilla cake batter. Divide 4lbs of vanilla cake batter in each rectangular pan, and divide your last 4lb portion between your two round pans. Bake at 350 degrees, for 1hr and 40 minutes (12 x 15 cakes), and 1hr and 10 minutes (9 round cakes). Let cool completely, in their pans, then chill until you are ready to use.

Prepare Buttercream

Prepare your Italian Meringue Buttercream. Set aside.

Print Templates

Print two versions of your Rainbow Dash template. Print one in full colour on regular paper, and the other print and place on cardboard. The second will be used to carve the cake.

Level Cakes

Remove your cakes from their pans, and level them.

Carve Pony Shape

Carve the torso and legs using the two rectangle cakes, and carve the head using the two round cakes. You will now have 2 x torso cakes, 2x head cakes, and 2 legs.

Divide and Dye Buttercream

Divide one batch of Italian Meringue Buttercream into six parts, roughly 1 cup each. Colour each portion a different colour. I used, Lemon Yellow, Orange, Red (no taste), Violet, Royal Blue, and Kelly Green.

Pipe Rainbow

Place each colour of buttercream into a piping bag. Begin piping your coloured buttercream onto 1x torso cake and 1x head cake (lined up correctly). Alternate between all six colours to achieve a rainbow pattern. Place the second layer of cakes on top, chill for 10 minutes.

Crumb Coat and Chill

Using your serrated knife, trim the top edges off the cake. Crumb coat the entire cake (including the legs), and then chill. Ice the pony and legs once more with your remaining buttercream.

Dye Fondant

Dye a 5lb portion of white fondant a combination of Royal Blue and Violet to achieve the Rainbow Dash colour on your template. Cover the cake in the blue fondant. Use a sculpting tool exaggerate the indents on her legs and face. Leave a bit of your Rainbow Dash Blue Fondant aside.

Create Gumpaste Wings

Using your gumpaste, create her wings. Let it dry for a few days. Once dry, cover with a thin layer of the blue fondant used for her body.

Create Eyes

Using the Burgundy icing colour, dye oz of white fondant different shades to mimic her ombre eye. Use the black icing colour for the black areas of her eye.

Create Tattoo

Using the Royal Blue, Lemon Yellow, and Red icing colours, dye your oz white fondant and shape Rainbow Dashs tattoo. Use the template as a guide.

Divide and Dye Fondant

Separate a 4lb portion of white fondant into 4 equal parts, dying each 1lb portion yellow (Wilton Lemon Yellow and Golden Yellow), orange (Wilton Orange), purple (Wilton Violet), and blue (Wilton Royal Blue).

Roll out Fondant

Roll your fondant into tubes that taper at the end. Trim where necessary to create the bangs, mane, and tail on Rainbow Dash.
