These are some spooky chocolate and vanilla cakes!

October is upon us, and that means Halloween is just around the corner! The classics are always the most inspiring to me- Frankenstein, Mummies, and Black Cats, and this week I couldn’t possibly pick just one to cake up. Did I mention the creepy surprise in each of these head cakes? Things are getting ghoulish around here!

Caking up these heads started with 3lbs each of green vanilla, blood red velvet, and black chocolate cake. Stacked up with sweet italian meringue buttercream, each of these cakes gets a secret chamber filled with dyed caramel goo- scareamel if you will, before being topped with the perfect fondant details.

Baking The Cakes:

3lbs Yo’s Ultimate Vanilla Cake

3lbs Yo’s Ultimate Chocolate Cake

3lbs Yo’s Blood Red Velvet Cake

Green Gel Food Coloring

Black Gel Food Coloring

Icing The Cakes:

Yo’s Simple Syrup

2 x Yo’s Quick Caramel

Yo’s Famous Italian Meringue Buttercream

Yellow, Orange, Electric Green, Black Gel Food Coloring

Decorating The Cakes:

1.5lbs Green Fondant

3.5lbs Black Fondant

3lbs White Fondant

1oz Yellow Fondant

LIme Green, Red, Black Candy Melts

Bake Your Cakes

Dye your vanilla batter green, and chocolate batter black. Divided 1.5lbs of batter into each of your cake pans and bake at 350 degrees for 1 hour. Let your cakes cool completely in their pans

Level Down & Layer Up

Level each of your cakes, and cut in half horizontally to create 2 layers from each. Keep the caramelization for the effect it gives!

Keep It Simple

Shower all of your cakes in simple syrup, and allow a few minutes to absorb before continuing

Secret Chambers

Cut a 2.25” circle from the center of 2 layers from each of your cakes

Stack It Up

Stack your cakes with Italian Meringue buttercream, keeping the 2 secret chambered layers in the middle. Don’t add the top layer just yet.

Candy Coated

Cut a piece of paper with a hole the same size as your secret chambers in it. Melt your candy melts, and pour the corresponding colors into your cakes, using a paint brush to coat the sides.

Scareamel

Dye your caramel orange, green, and black, and use a piping bag to fill the corresponding cake. You can also pour the caramel in, using your template to protect your cake.

Crumb Coat & Chill → Ice & Chill

Place the top layer on each of your cakes, and crumb coat with buttercream before chilling for 20 minutes. Ice with more buttercream, and chill for another 20 minutes

Fondant Time

Thinly roll enough black fondant to cover 2 cakes, and lime green fondant to cover the other. Pick up on a french rolling pin, and drape over your cakes (green in green fondant, black and red in black fondant). Smooth in place with a fondant smoother.

Frankencake

Use a 7” round cake pan to help guide you in cutting out Frankenstein’s hair from a piece of thin black fondant. Cut eyes from fondant as well, and use a clay extruder to make scars and stitches. Create his signature bolts out of white fondant, and paint with silver luster dust

Mummified

Form your mummy’s eyeballs in measuring spoons and allow to firm in the fridge before removing. Paint veins and pupils with food coloring, using a bottle neck to hold them in place. Cut strips of white fondant to wrap around your cake

Purrrfect

Create whiskers for your cat by rolling black fondant around floral wire. Form ears, and insert lollipop sticks to secure into your cake. Cut eyes and pupils out of yellow and black fondant.
