This week, IT’S MY BIRTHDAY!!! As tradition goes at How To Cake It, I’m scooping up some Ice Cream to celebrate - in cake form of course! A GIANT banana split seemed like the perfect way to truly treat myself this year, and I must say it was amazing right down to the last bite!

To treat myself right I started off with Ultimate vanilla, Ultimate Chocolate, AND my personal favourite Banana Cake. All stacked together with sweet Italian Meringue Buttercream, I gave myself a scoop of chocolate, vanilla, and strawberry, all dressed off with fudge, caramel, and strawberry sauces with my FAVOURITE ice cream shop inspired toppings and perfect fondant cherries.

Baking The Cake:

-4 ½ lbs Ultimate Chocolate Cake

-9lbs Ultimate Vanilla Cake

-Pink Gel Food Coloring

-8lbs Banana Cake

Icing The Cake:

-Italian Meringue Buttercream

-Simple Syrup

-Vanilla Bean

-Dark Chocolate

-Pink Gel Food Coloring

-Chocolate Shavings

-Strawberry Jam

Decorating The Cake:

-8oz Red Fondant

-4lbs Soft Yellow Fondant

-Caramel Sauce

-Chocolate Glaze

-Corn Syrup

-Red Gel Food Coloring

-Clear Piping Gel

-Fresh Strawberries

-Coconut Chips

-Chocolate Chunks

Bake Your Cakes

Dye 4 ½ lbs of vanilla cake batter pink, then divide as follows and bake at 350 degrees for 1 hour 40 minutes:

 

2 ¼ lbs batter per half sphere pan:

1 6” vanilla sphere

1 6” pink vanilla sphere

1 6” chocolate sphere

 

11 x 15” banana cake




Level Scoops

Level your half sphere cakes in their pan before removing, and cutting ¼” off of one half of each cake so it has a stable base. Carve away caramelization from all of your cakes, including the chocolate so it is even


Simple Syrup

Simple syrup both sides of all of your ½ sphere cakes


Buttercream Ice Cream

Divide your buttercream into 3 bowls colour and flavor as follows:

Vanilla with vanilla bean

Chocolate with melted dark chocolate

Strawberry with pink gel food coloring




Crumb Coat and FILL

Combine the halves of your cakes into spheres using the coordinating buttercream, and crumb coat before chilling for 20 minutes


Banana Cake

Remove your banana cake from it’s pan, level it and remove all caramelization before simple syruping


Getting Bananas

Cut 3” rounds of your banana cake, and stack together horizontally, 2 at a time. Carve and shape into the curve of a banana. Chill 20 mins

Take It Up A Notch

Add chocolate shavings to your chocolate buttercream, and strawberry jam to your pink buttercream.  Use these, along with your vanilla bean buttercream to ice your respective ice cream scoops, and smooth out with a sheet of acetate. Chill for 20 minutes.


Carve & Ice

Cut your banana cake in half lengthwise, laying the flat sides down. Shape pointed ends like a banana before icing with Italian Meringue Buttercream and chilling for 20 minutes.


Take Cover

Thinly roll out your soft yellow fondant and apply a thin layer of buttercream where your banana will be placed before carefully laying the cake on top and wrapping fondant around. Trim a clean eam that the bottom which will be hidden once your banana is placed in its bowl.


Texturize

Use a shelf liner to add texture to your banana


How Many Scoops?

Lay your bananas in your bowl and start adding your scoops, applying extra buttercream to the bottom to make it look like it just came out of an ice cream scoop

Get Saucy

Add clear corn syrup and red food colouring to your strawberry jam to make strawberry sauce. Pour Chocolate sauce on your strawberry scoop, caramel on your chocolate, and strawberry on your vanila. Add chocolate chunks on your chocolate sauce, coconut chips on the caramel, and fresh strawberries on the strawberry sauce.


The Cherry On Top

Roll 3 equal balls of red fondant, indenting with a sculpting tool before painting with clear piping gel. Pipe dollops of buttercream on top of your ice cream scoops before adding your cherries.
