Two Scoops Of Mint Chocolate Chip Buttercream!

Prepare Vanilla Cake Batter

Prepare the 8lb portion of vanilla cake batter and pour into 7 round pans. Baking at 350 degrees for 1hr and 40 minutes, or until a cake tester comes out completely clean. Let cool completely in their pans.

Prepare More Vanilla Cake Batter

Prepare the 6lb portion of vanilla cake batter and pour into 8 round pans. Baking at 350 degrees for 1hr and 30 minutes, or until a cake tester comes out completely clean. Let cool completely in their pans.

Prepare Chocolate Cake

Prepare the two 8lb portion of chocolate cake. Pour the batter, evenly in your two stainless steel bowls. Bake at 350 degrees for 1hr and 40 minutes, or until a cake tester comes out completely clean. Let cool completely in their bowls.

Prepare Buttercream

Prepare your Italian Meringue Buttercream. Set aside.

Level, FIll, and Layer Vanilla Cakes

Remove all your vanilla cakes from their pans, and level them. Layer your 7 vanilla cake on top of each other, filling each layer with buttercream. Repeat the process with your 8 cakes. Let chill.

Level Chocolate Cakes

Remove your chocolate cakes from their bowls and level them.

Crumb Coat Ice Cream Scoop

For the cake that will be your top scoop of ice cream, carve out enough of the inside so that you can stack it onto the bottom layer of chocolate cake. Crumb coat both cakes, and let chill.

Carve Cakes

Once chilled, carve the bottom and half of your cone, tapering out. Repeat the process with the top half of your cone, only carving slight amounts. Crumb coat, and let set.

Ice Cakes

After the crumb coat has set, ice both parts of the cone. Let chill.

Apply Cone Fondant

Take your 5lbs of White Fondant, and add colour little by little to mimic the Ice Cream Cone colour. Roll out your fondant, and apply to your vanilla cakes. Once applied, put the cone together.

Create Cone Details

Create the details on your cone by using a PME strip cutter number 3 and a Clay Extruder.

Paint the Cone

Mix some Wilton Ivory Icing Colour with alcohol (you can also use lemon extract), and use it to paint a light coat onto your fondant.

Dye Buttercream

Add green icing colour to one batch of your Italian Meringue Buttercream, little by little until you achieve a mint green colour.

Add Dark Chocolate

Fold dark chocolate shavings into your buttercream to achieve the look of chocolate chips.

Ice and Add Ice Cream Scoops

Ice both chocolate cakes with your green buttercream, then stack your ice cream scoops onto your cone!
