    Sprinkle Mega Cake

This Vanilla Cake Is Sprinkled With Love

I wanted to SPRINKLE a some flare this cake, so I literally made a SPRINKLES Mega Cake and literally put sprinkles in every nook and cranny possible. But not just any sprinkles! I teamed up with Sweetapolita and got Gourmet Metallic Rod Sprinkles in pink, teal, silver and gold! You can say they are the Beyonce of  Sprinkles and so I knew I had to cake this one to the LIMIT.

To make this Sprinkle Mega Cake, I baked 6 lbs of my Ultimate Vanilla Cake and added colorful sprinkles to my bater. I also filled the cake layers with different sprinkle medleys, iced the cake in my sweet Italian Meringue Buttercream, and decorated it in a shiny checkerboard pattern with multi-colored metallic rod sprinkles.

    Bake Cakes

Prepare 6 lbs of my Ultimate Vanilla Cake and 2lbs of batter into three three 6” round pans. Fold in a ½ of sprinkles to each batch. Pick a different colour per batch. Bake the cakes at 350 degrees for 1 hour and 10 minutes.

    Level Cakes

Level the cakes to the same height and remove the caramelization from the bottom.

    Divide by 3

Use a serrated knife and ruler to score the cakes into three even layers. Then cut each cake into three layers.

Note: To See How I did this step see the video here.

    Remove The Caramelization

Use a 6” round pan as a template to help you remove the caramelization around the cake layers.

    Simple Syrup

Simple syrup all 9 cake layers of cake with Sir Squeeze A-lot.

    Build The Cake

Apply a layer a layer of Italian Meringue Buttercream to the first layer and sprinkle one of your sprinkle medleys on top. Then add a different colored cake layer, buttercream and a layer of your second sprinkle medley. Repeat the process continuing to alternate your cake layer colours and sprinkle medleys until you are done.

Note: To see how I did this step, please see the video here.

    Crumb Coat and Chill

Crumb coat the cake with Italian Meringue Buttercream and chill for 20 minutes.

Note: Apply the buttercream gently because the sprinkles in between each layer can make the cake more prone to shifting.

    Ice, Ice Baby

Ice the cake with Italian Meringue buttercream and use a large bench scraper to smooth the edges.

    Decorate The Cake

Choose 4 different colour metallic rod sprinkles. To create a checkered pattern, start by placing a row around the base. To make sure they are equal distance apart, use rod as a spacer. Place the second row of sprinkles in the same colour order above and to the right. The second row of sprinkles should rest above the empty spaces of the row below it. Repeat this process until the cake is completely covered.

Note: To see how I did this step, see the video here.

    Add Dragees

Place a 6” round pan on top of the cake. Pour a layer of metallic dragees within the pan until the surface is covered. Remove the round pan gently.

    Pipe A Border

Pipe a border of buttercream around the dragees.

    Add More Decorative Details

Place large and small dragees on top of the buttercream border. Place metallic rod sprinkles on the cake stand around the base in the same checkered pattern as the cake.

    Congratulations!
