    Meringue Topping

     

    Light, dreamy, and simple. Meringue is a great way to top a Key Lime, or Lemon Meringue Pie! Finish the meringue off by caramelizing the edges, and youll have a sweet piece of art. Seriously, there are two ingredients - could it get any easier?

    • 5 Egg Whites
    • ⅔ cup Sugar

    Whisk
    Stand Mixer With Whip Attachment
    Bowl

    Whisk Egg Whites and Sugar

    Whisk egg whites and sugar in the bowl of an stand mixer, over a pot of hot water.


    Heat Mixture

    You want to heat the mixture until the sugar dissolves and it feels hot on your fingertip. Not hot enough that your eggs start to cook.


    Remove from Heat

    Remove the bowl from the heat, and place on stand of the stand mixer.


    Whip Mixture

    Using the whip attachment, whip the egg white mixture at high speed until stiff meringue forms.


    Tips!

    You can brown the meringue in the oven at 350 degrees for 10 minutes, or using a brulee torch.
