Holiday Chocolate Mega Cakes

Double down on chocolate goodness with these cakes!

Layer in all that candy goodness with a spatula combo

Leftover chocolate might be a bit of an oxymoron, but sometimes around the holidays you just get so much of it! Whether it’s been brought over by guests, or shimmied its way down the chimney with Santa, this is the time of year for chocolate overload, and this week I’m upping the ante by elevating it to a next level sweet treat.

Starting with 12lbs of my Ultimate Chocolate Cake, I’m stacking these babies up with all of my fave fillings- swiss meringue chocolate buttercream, chocolate ganache, and sweet sweet caramel! Layered together with classic holiday chocolates these cakes are begging that you don’t have any healthy eating new year's resolutions!

Baking The Cakes

12lbs Yo’s Ultimate Chocolate Cake

Icing The Cakes

Simple Syrup

Yo’s Famous Italian Meringue Buttercream

Yo’s Chocolate Swiss Meringue Buttercream

Yo’s Vanilla Frosting

Yo’s Dark Chocolate Ganache

Yo’s Rich Caramel

Instant Coffee

Turtles, Toblerone, Almond Nougat, Assorted Chocolates

Decorating The Cakes

White Chocolate

Milk Chocolate

Dark Chocolate

Red Candy Melts

Cocoa Powder

2 x 7" Round Cake Pans
2 x 8" Round Cake Pans
Simple Syrup Bottle	Add to Cart -
Small Straight & Offset Spatula	Add to Cart -
Large Straight & Offset Spatula	Add to Cart -
Large Serrated Knife
Ruler	Add to Cart -

Bake Your Cakes

Divide your batter into your pans, and bake at 350 degrees as follows:

6” Round → 1.5lbs batter → 55 minutes

7” Round → 2lbs batter → 1 hour

8” Round → 2.5lbs batter → 1 hour 5 minutes

Let your cakes cool completely in their pans before removing

Level Down & Layer Up

Use a ruler and serrated knife to level each of your cakes, and layer in two.

Keep It Simple

Shower your cakes with simple syrup, and allow a few moments to absorb before continuing

Cake 1: Assorted Chocolates

Mix concentrated instant coffee into your vanilla frosting, and stack your cake as follows:

Cake
Coffee Frosting
Piped Ganache
Repeat

Place your cake in the fridge to chill

Cake 2: Turtles

Grab your turtles, and stack this cake up as follows:

Cake
Chocolate Ganache
Turtles
Caramel Drizzle
Repeat

Chill your cake until firm.

Cake 3: Toblerone

Break your toblerone into its individual pieces and stack as follows:

Cake
Chocolate Swiss Meringue Buttercream
Toblerone
Cake
Italian Meringue Buttercream
Toblerone
Cake

Place your cake in the fridge to chill

A Little Off The Top

Carve your cakes slightly, adding a swirl to one, ripples to another, and bumps to the third.

Nuggets of Nougat

Place chopped nougat on top of your toblerone cake

Draped In Chocolate

Melt your white, dark, and milk chocolate, and pour over your cakes as follows:

White- Toblerone

Dark- Assorted

Milk- Turtles

Decorated

Finish your cakes off with quick decorations as follows:

Dark Chocolate Drizzle- White Chocolate Cake

Red Chocolate Drizzle- Milk Chocolate Cake

Cocoa Powder Dusting- Dark Chocolate Cake
