Ice it right with a spatula combo!

I might be Canadian, but that doesn’t mean I’m not SUPER thankful for all of my American YoYo’s, and I can’t help but want to celebrate with you all! Over the last few years around this time I’ve focused on the main course- this year, it’s time for DESSERT!

This pie starts with CAKE! 15lbs of my Pumpkin Spice Cake to be exact! Stacked up with sweet Italian Meringue Buttercream, I use a pretty unique method to keep my slice looking fresh. All wrapped up in a fondant crust, and topped with a luscious “whipped cream” dollop, this cake is definitely something to be thankful for.

Baking The Cake

Bake Your Cakes

Divide 5lbs of batter into each of your cake pans, and bake at 350 degrees for 1 hour 20 minutes, rotating halfway through. Let your cakes cool completely in their pans

Level & Decaramelize

Use a ruler and long serrated knife to level each of your cakes, and remove the caramelization from the bottom

Sliced

Cut a triangle shape out of each of your cakes, with the short side rounded. Use a template to ensure sizing is the same on all of your cakes.

Layers

Create 2 layers from each of your cakes by dividing them with a ruler and serrated knife horizontally

Keep It Simple

Shower all of your cake layers with simple syrup, and allow to absorb for a couple of minutes before continuing.

Fenced In

Combine your cake crumbs, clear piping gel, and some buttercream into a paste using your mixture, and fill your piping bag with it. Stack your cakes, piping a border of your cake crumb mixture around each layer before filling the center with Italian Meringue Buttercream. Place your cake in the fridge to chill.

Revamped

Adjust your cake crumb paste to be a spreadable consistency, and the color of pumpkin pie filling. Add more buttercream, and orange gel food coloring to get there!

Crumb Coat & Chill → Ice & Chill

Use your crumb mixture to crumb coat (literally) your cake, and chill for 20 minutes before icing with the smse mixture and chilling for another 20 minutes. Apply with a downward motion to mimic the look of it being sliced!

Crusty

Roll out your tan fondant, thick enough to be your pie’s crust, into a long strip, pointed at one end. Lift your cake on top of your fondant, and wrap it around the back, smoothing in place with a fondant smoother.

Trimmed

Trim away the excess fondant from the sides of your cake, leaving excess to fold over at the top and create your crust. Do so my marking an even line before trimming, and use toothpicks to help you out.

Impressed

Use a giant fork (or skewers) to create a crimped, pie crust pattern on your crust. If you have any holes left from toothpicks just pinch them together. Apply a little more of your icing mixture to the top of your crust to make your pie look nice and full.

Paint Job

Mix ivory gel food coloring with clear food grade alcohol and paint on your crust to make it look perfectly golden brown.

Toasty

Lightly toast the top of your pie using your brulee torch. Focus around where the filling meets the crust!

Glossy

Paint the top of your slice with clear piping gel to give it a shiny appearance

Whipped

Dollop a generous heap of Italian Meringue Buttercream on top of your slice. Re-whip it in the mixer if necessary to get a nice consistency.
