Candy Cane Cakes with Whole Egg Holiday Buttercream

Prepare Cake Batter

Prepare the 4lb portion of Yos Ultimate Vanilla and Chocolate Cake batters. Once prepared, fold cup of crushed candy cane into each batter.

Fill Cake Pans

Fill each half of the 4 sphere pan with cup of vanilla batter. Then fill each half of the 5 sphere pan with 1 cups of vanilla batter. Fill each half of the 6 sphere pan with 2lbs of chocolate cake batter.

Bake Cakes

Bake cakes at 350 until a cake tester inserted in the middle comes out clean. About 50 minutes for the 4 sphere, 1 hour and 10 minutes for the 5 sphere, and 1 hour and 30 minutes for the 6 sphere. Let cool completely in pans.

Prepare Buttercream, Simple Syrup, and Royal Icing

Prepare your Eggnog Buttercream, Simple Syrup, and Royal Icing. Set aside.

Level Cakes

Level your half sphere cakes in their pans and then carefully remove. Soak each cake in simple syrup.

Fill with Buttercream

Fill each of your sphere halves with a layer of eggnog buttercream, then sandwich the two halves together to form a ball. Crumb coat and chill for 30 minutes.

Knead Fondant

Make your teal fondant by kneading together teal and dark green fondant. Make your raspberry red fondant by kneading together red and bright pink fondant. Use 1lb of the White fondant for the other ornament cake.

Cover Cakes

Cover your sphere cakes in their coloured fondant. Cut away any excess fondant, or wrapy any excess fondant underneath. If there are any noticeable creases, chill the cake for 10 minutes and then patch it.

Create Patterns

With the smallest Christmas Ornament create a pattern of pearly snowflakes. Use a set of plunger cutters to cut snowflakes out of thinly roll out 2oz of gumpaste. Brush the snowflakes with pearl luster to create a shimmer. Brush a little bit of water to the backs of your snowflakes, and place on the cake.

Add Sugar Diamonds and Dragees

With the medium ornament, crush sugar diamond and toss them with my silver drages. Ice your cake with a layer of royal icing, then press the dragee/sugar diamond mixture with the palm of your hand.

Add Gold Pattern

For your final ornament, dilute some gold highlighter with white rum, then splatter onto the cake with your finger.

Prepare Ornament Tops

For the ornament tops, mix 1 tsp of CMC into your fondant. Dye 2 oz of fondant deep grey with some black gel colour, and 3 oz deep yellow with Golden Yellow gel colour.

Cut Out Ornament Top

To create the toppers, roll a 1 thick disc. Use vegetable shortening along the cutter to keep the fondant from sticking.

Create Decorative Band

Roll out the excess into a long band. Cut a 1 strip that is straight along one edge, and use a frill cutter along the other edge. Use a little water to wrap the decorative band around the fondant circle. To make each topper different, use three different frill cutters.

Brush on Pearl Luster

Brush dry pearl luster onto the white topper. Paint the grey topper with silver highlighter mixed with white rum, and the yellow topper with gold highlighter mixed with white rum. Set them aside to dry.

Create Rings

Roll out the remaining 1oz of gumpaste and mark lines with a strip cutter. Cut through the lines creating thin strips of gumpaste. Wrap the strips around a greased circle cutter, once dry attach the toppers to their rings. You can also add a ribbon bow to your rings!
