BTS Mascot Mini Cakes

Attention BTS A.R.M.Y. it’s cake time!

Annyeonghaseyo A.R.M.Y! With their catchy music and lovable personalities, BTS has completely hearts of millions from around the world! To show my love for them, I did what I do best – cake! This isn’t some FAKE LOVE so I put my Blood, Sweat, and Tears into it and I can’t wait for the rest of you to see it!

To cake these BTS Mascot Minis, I began by baking 7.5lbs of my Ultimate Chocolate Cake into 5 mini cakes. Each cake includes a layer of my famous Italian Meringue Buttercream in the middle for an extra sweet bite. The mascots are also coated with colourful fondant with cut-out features on top. These cakes may be mini but they sure are strong just like the A.R.M.Y.!

1 batch Yo’s Famous Italian Meringue Buttercream

Decorating The Cake:

1¼lbs white fondant

2oz black fondant

1lbs grey fondant

Bake Your Cakes

Start by dividing your 7.5lbs of Ultimate Chocolate Cake into 5 parts – 4 of which will be 1.75lbs each leaving 0.5lbs for the last smaller cake. Pour each of the 1.75lbs parts into their own separate 6” round pan lined with parchment paper baking them for 1 hour and 15 minutes at 350 degrees Fahrenheit. Pour the remaining 0.5lbs into a 4” round pan also lined with parchment paper then bake for 35 minutes at 350 degrees Fahrenheit.

Just A Quick Trim!

These characters don’t require any levelling on the top because the round hump will make the face of each mascot, however, they do require a little trimming! Each character is a slightly different shape so by laying the character templates on the hump or face of each cake, begin shaping and carving them. Keep in mind that each of the mascot cakes will have a rounded face and a flat back so there is no need to trim the back when shaping your cakes.

Layer It Up!

Cut each cake horizontally into 2 even layers.

Cooky's Ears

Cooky has two ears that stick out at the top of his head so to create them, start by carving the smallest cake with a small serrated knife until you are happy with the shape of your ears!

Keep It Simple!

Using Sir Squeeze-A-Lot, soak all of your cake layers with simple syrup, then let them sit for a few minutes to absorb.

Fill + Stack

Fill each layer with IMBC and stack them back to how they were making four separate cakes.

Crumb Coat & Chill

Crumb coat each of the cakes with IMBC – including each of the ears separately from the body, then place them in the fridge to cool until firm.

Ice, Ice, Cakey!

Remove the cakes from the fridge and apply another layer of IMBC using my invention – a square piece of acetate. If necessary, you may repeat this step more than once.

TIP: Using a square piece of acetate works well when icing cakes with a curve because you can bend it between your fingers to mold to the cake’s shape!

Foam Support

To make the cakes stand upright, they each need some support. Cut out foam boards to the size of the flat edge of each cake (not the ears) then spread some IMBC onto the boards and stand each cake up.

Icing Pt 2!

Now that your cakes are standing, ice the backs of each cake.

Cooky's Body

We’re going to focus on each mascot cake separately beginning with Cooky. Roll out some pink fondant to 1/8” thickness then lay it out on the back of the cake leaving a border of uncovered cake and trimming the excess off. Roll out some more pink fondant to the same thickness and cover it on the front of the cake wrapping the edges around the back and trimming off the excess at the seam as well as at the bottom. There will be seams on the back of these cakes so try to smooth them out.

Cooky's Face

For Cooky’s face, cut out the features from the template and place them on some thinly rolled out black fondant. Using a sharp paring knife, cut the features out of the fondant.

Cooky's Ears

Cover the two cakes with fondant just like with the body of his cake. Begin with a layer on the back with an uncovered border then add a front layer that wraps around the edges meeting the back piece. Next, roll out some white fondant and cut out the shapes of his inner ears.

TIP: Because the ears are so small, you can lay them onto a soft sponge and then fold your fondant over the back and trim.

Cooky's Assembly

Flip each of the features over and add some clear piping gel to stick them onto the face of the cake then do the same for the white inner ear pieces. To attach his ears, cut two dowels to the perfect height and sharpen each end of the two dowels. Mark off where his ears will go at the top of his head then insert the dowels where the marks are and carefully add the ears.

Shooky's Body

Now that you’ve gotten some practice covering Cooky’s cakes with fondant, you’re going to follow the same procedure with Shooky’s cake. Using some rolled out brown fondant, cover the back leaving an uncovered border then covering the front with some more brown fondant meeting the edges of the back with a clean cut at the bottom as well.

Shooky's Features

Cut out his features from the paper template, then using some more rolled out fondant in the appropriate colours, trace the features and cut them out. Shooky is also special because he has some extended parts. Roll out some chocolate fondant into two little tubes and cut them in half. Mold two of the halves into feet and the other two halves into arms.

Shooky's Assembly

Glue his facial features on using clear piping gel as well as his feet to the bottom of the cake. For the arms, use a lollipop stick to attach the pieces to the sides of the cake adding some clear piping gel to stick the fondant to the fondant for some extra security.

Mang's Body

Cover the body of the cake the exact same way as the previous two mascots but with a light blue fondant.

Mang's Features

The only template you will be using for Mang’s features is for his eye. His eye is made of three layers of fondant so cut them out then stick them together using clear piping gel. Using a circle cutter and some hot pink fondant, cut out his nose to create the one half of a heart because his cake is of his side profile. For his ears, they are the same colour as his face so with the same light blue fondant, roll it into a ball then roll and shape it then attach it to his head. His hair is a darker shade so roll some darker blue fondant into a longer tube then mold it to the inside of a daisy cutter. Once it takes the shape of the cutter, take the fondant out, cut the edges, and partially uncurl it to fit the top of the cake. To make the inner edge smoother, lay a cake pan on top and trim along it. Lastly for Mang’s tail, roll out a thin tube keeping one side heavier than the other and pinch one end to make it look more like a horse tail then trim to the proper length.

Mang's Assembly

Stick his eye and nose onto the front of the cake with clear piping gel. The hair is a little tricky because it runs down from the top to the bottom of the cake so use three 2½” lollipop sticks and attach it to the cake. Next, attach the ear to the top of the cake next to the hair using a lollipop stick. Lastly, stick the tail to the bottom of the hair using some clear piping gel.

Van's Body

This cake will be covered in the same way as the previous but with two colours. Beginning with the back, cover half with white and the other half with grey forming almost two semi circles that meet at a clean seam. Next, cover half of the front with the grey fondant, chill it, then cut a clean seam. Lastly, cover the second half with white fondant making sure to cut a very clean seam again.

Van's Features

Using Van’s template and some black rolled out fondant, cut out the features. For Van’s top piece, roll out some grey and white fondant into two equal balls then flatten both slightly. Once you have the shapes, cut each in half then place two halves together creating one ball then cut a half circle out of the bottom so that it sits better on the top of your cake.

Van's Assembly

With clear piping gel, attach Van’s features to the front of the cake. Because the poof sits directly at the top of the cake, there is no need for lollipop sticks so place it on top using some clear piping gel for reinforcement.
