Baseball World Series Cake

Filled With Beer Nuts, Caramel Corn, and Chocolate!

Since I am a proud Torontonian, with an amazing baseball team, I needed to make a cake to celebrate my Toronto Blue Jays! Even though it has been a long while since weve won a World Series, they made this Toronto girl proud. This event calls for red and blue vanilla cake layers, filled with all the best baseball snacks. Beer nuts, caramel corn, pretzels, jelly beans and smarties. All held together with delicious Italian Meringue Buttercream, of course.

  • 1 x 8lb recipe of Yo's Ultimate Vanilla Cake
  • 2 x Wilton Royal Blue Icing Colour
  • 2 x Wilton Red No Taste Icing Colour
  • 1 x recipe Italian Meringue Buttercream
  • Simple Syrup
  • 1 cup Beer Nuts
  • 1 cup Caramel Corn
  • 1 cup Pretzels
  • ½ cup Red Smarties
  • ½ cup Blue Smarties
  • ½ cup Cherry Jelly Bellies
  • ½ cup Blueberry Jelly Bellies
  • ½ cup Graham Cracker Crumbs
  • ¼ cup Cocoa
  • 4 diameter Sphere Cake
  • 1 oz White Chocolate
  • ½ lb White Fondant
  • ½ recipe of Royal Icing

Prepare Vanilla Cake Batter

Prepare your 8lb portion of Ultimate Vanilla Cake batter. Divide batter into two 3  lb portions. Dye one portion blue using Wilton Royal Blue Icing Colour. Dye the other portion red using Wilton Red No Taste Icing Colour. Bake at 350 degrees for 1 hour, or until a cake tester comes out completely clean. Let cool completely in their pans.


Bake Cakes

Use the remaining batter to fill both halves of your 4 diameter sphere pan if you would like to make the baseball cake topper. I filled each half with 1/2 lb of batter. Bake at 350 degrees for 20 minutes, or until a cake tester comes out completely clean. Let cool completely in pans.


Level Cakes

Remove your red and blue cakes from their pans, level and cut them in half. Remove the caramelized edges, to reveal the bright colours of the cake.


Shape Cake into a Pentagon

Cut cakes into a pentagon, the shape of home plate on a baseball field. You can use a template to assist you in carving out the shape.


Soak Cakes with Simple Syrup

You should now have four pentagon shaped cake layers: two red and two blue. Soak all layers with simple syrup.


Spread Buttercream

Spread a layer of buttercream onto a blue layer, and then use your piping bag fitted with a # 807 round tip to pipe a buttercream fence along the top edge of the pentagon. Fill the inside of with all of your baseball snacks!


Pipe on Buttercream

Pipe a few mounds of buttercream here and there to help your cake layers stick together.


Stack Cakes

Place a red layer on top of the blue one. Use your small offset palette knife to smooth and wipe away the excess buttercream. Repeat the filling process, with each layer of cake.


Chill Cake

Add the final red layer to the top of your cake and set it in the fridge to chill for 30 minutes.


Spread More Buttercream

Spread a thin layer of buttercream onto the top red layer. Set aside.


Mix Graham Crumbs and Cocoa

Mix together your graham cracker crumbs and your cocoa until you are happy with the colour. Sprinkle a thin layer of this mixture onto the top of your cake.


Crumb Coat and Chill Sphere Cakes

Remove both halves of your 4 diameter sphere cake. Melt your white chocolate and spread it between the two halves of cake to secure them together. Crumb coat your sphere cake topper and chill for 15 minutes. Then, ice and chill for 30 minutes.


Cover Cake in Fondant

Roll out 1/2 lb of white fondant and cover your cake topper. Trim away any excess fondant.


Mark Curved Lines

Using the sculpting tool, mark the curved lines onto your sphere cake. Use the pointed sculpting tool or a toothpick to poke a series of holes along either side of the curved lines. This is where you will pipe the stitching.


Dye Royal Icing

Dye your royal icing red using Wilton Red No Taste, this will be used for the stitching of the baseball.


Pipe Royal Icing

Pour your red icing into a piping bag, and pipe the stitching onto the ball. Take any extra graham/cocoa infield mix and smudge onto your baseball to make it look dirty.


Add Baseball Cake Topper

Place baseball on top of your cake! Finish it off by adding more baseball snacks!
