Baby Shower Cake

Bake Your Cakes

Divide 3lbs of batter into each of your 8” square cake pans and 4.5lbs of batter into each of your 10” square cake pans. Bake the 8” pans at 350 degrees Fahrenheit for 1 hour 20 minutes and the 10” pans at 350 degrees Fahrenheit for 1 hour 40 minutes. Let your cakes cool completely in their pans.

Level Down & Decaramelize

Remove your cakes from the pan. Use a ruler and serrated knife to level your cakes and remove the caramelization from the bottom of your cake.

Carve it!

Carve each square cake into a pillow - thicker on top and tapering on the sides so that each cake looks like half of a pillow. For each of the 8” square cakes, also carve an “X” into the thicker side of the cake to create the illusion of a tufted pillow.

Keep It Simple

Use Sir Squeeze-A-Lot to soak all of your cake layers with Simple Syrup.

Build Your Cake

Stacking your cakes (make sure the flat side is facing up!) using Italian Meringue Buttercream, sprinkle on a handful of toffee bits and add another layer of Italian Meringue Buttercream before adding the top layer of the cake “pillow”.

Crumb Coat + Chill!

Crumb coat your cakes with a thin layer of buttercream, and chill for 20 minutes or until firm.

Ice, Ice, Cakey!

After you’ve removed your cake from the fridge, apply another layer of Italian Meringue Buttercream onto the cake and create a smooth layer to get ready for decorating! Chill for another 20 minutes to firm up.

Mold It!

Knead and put your Blue Fondant into the Perfect Petal Pattern Marvelous Molds mold and use a fondant pin to ensure that your pieces are the same size. Then using your Purple Fondant, knead it into the Lavish Loops Marvelous Molds mold and use a fondant pin to ensure that your pieces are the same size. Create as many patterns as you can ahead of time so that your molds are ready to go for cake decorating.

Place It!

Using the Blue Fondant pieces, apply them on the 10” cake, piecing them together like a puzzle. Take the Purple Fondant piece and apply them onto the tufted 8” cake. Take care of the tufted center and add the fondant in triangles for each quadrant. This would create a seam for both pillows along the sides of the cake where the cake is at its widest. Reverse the purple pattern for the bottom of the pillow and don’t forget to make sure that the pattern for both pillows are all going in the right direction!

Tip: Lay your pattern from the center out… this way if you have to do any trimming, it’s at the seam of the pillow!

Add Color!

Mix clear food grade alcohol with blue lustre dust, and paint the Blue Fondant covered pillow. Mix clear food grade alcohol with purple lustre dust, and paint the Purple Fondant covered pillow.

Note: using coloured alcohol will tint light colors

Decorate!

To create a button for the center of the pillow, use a piece of your Purple Fondant and insert into the centre of your circle cookie cutter or glass. Use one end of your fondant pin and press lightly into the center to create a slight indent. Paint with purple lustre dust.

Extrude!

Fill your clay extruder with white fondant and extrude long pieces of “cord” to hide the seams of your pillow cakes in two different thicknesses and roll two pieces of white fondant together to create a twirled effect. You need to create at least 8 pieces of each size cord, add more for insurance if needed!

Paint It!

Mix clear food grade alcohol with champagne lustre dust, and paint the White Fondant cords.

Tip: Wait for one side to dry before turning over to paint the rest of the cord

Attach It!

Using piping gel, paint the seams of the pillow and attach the champagne colored cords. Be very careful as the moisture from the gel may remove some of the color from the cord. Attach the thicker cord to the larger pillow and the thinner cord to the smaller pillow. Cut the corners as necessary.

Finishing Touches

Touch up any parts of the cake that need painting again and add the button with piping gel to the top of the purple pillow.

Shake It Up!

To create the rattle, wrap a plastic ball with the Yellow Gumpaste using piping gel to attach. Make sure all of the seams are at the bottom of the ball since we won’t be seeing the bottom.

Dowel It Up!

In order to create the handle of the rattle, roll out the same Yellow Gumpaste in a cylindrical shape and apply piping gel onto a wooden dowel. Then feed the wooden dowel through the center of the Yellow Gumpaste. Roll it out in order to get it to the perfect thickness. Trim a clean seam and trim at both sides and make sure both sides of the dowel are pointed as this will help with assembly.

Tip: Create two dowels with different thicknesses so that you can pick what you prefer when assembling.

Rattle's Finishing Touches!

Create a smaller ball using the same Yellow Gumpaste to attach to the end of the rattle. Set aside to rest.

Golden Touch

Using gold lustre dust and clear food grade alcohol, paint all pieces of the rattle. Allow all pieces to dry completely before assembly.

Rattle Assembly

In order to create the rattle, you will need to puncture the plastic ball with a sharp tool or the sharpened point of the wooden dowel. Apply a touch of Royal Icing to the ends of the dowel to secure and push the dowel into the plastic ball. Attach the smaller ball onto the other side of the dowel.

Seam Hider

Roll a small and thin cord of your Yellow Gumpaste in order to hide your seams by using piping gel as an adhesive. Paint with gold lustre dust.

Stack It Up!

Using the blue pillow as the base, stack the purple pillow on top and place the rattle last. If you will be transporting this cake anywhere, use dowels in the blue cake before stacking.
