Have a MEGA Break - Have a MEGA KitKat Cake. You deserve a break - have a KitKat… MEGA cake! This cake is basically a KitKat lovers’ heaven and gives your tastebuds the whole delightful KitKat experience.
This KitKat Mega Cake is a chocolatey dream so it begins with Yo’s Ultimate Chocolate Cake, but also features delicious Matcha Cake and Funfetti Cake. I flavored my buttercream using various ingredients such as sprinkles, dried cranberries, black sesame seeds, toffee bits and more to create 3 unique buttercream flavors then stacked each cake with its respective IMBC. It wouldn’t be a KitKat Mega cake without fun flavors so I sprinkled the cake with Have Your Cake, Good Fortune Green Tea, and Totally Butter Tart KitKats and topped it off with a sweet bow!

Line your pans with parchment paper and preheat your oven to 350 degrees Fahrenheit. Prepare your batter and bake the cakes as follows:
2 x 4” round cake pan → 0.5lb Yo’s Ultimate Chocolate Cake each → 45 minutes
2 x 5” round cake pan → 0.75lbs Vanilla cake with ½ tsp matcha powder mixed in each → 50 minutes
2 x 7” round cake pan → 2.25lbs Vanilla Cake with ½ cup sprinkles mixed in each → 1 hour and 20 minutes
TIP: Let your cakes cool completely in the pans before removing.
Remove your cakes from their pans then level each one. Remove the caramelization from the bottoms of each cake as well.
Layer each of the cakes into two layers for a total of 12 layers. Remove the caramelization from the sides of the cakes.
Use Sir Squeeze A Lot to soak your layers with simple syrup. Let them absorb for a couple of minutes.
Divide your buttercream into 4 equal parts then set one part aside. Mix sprinkles into one portion until fully incorporated. Mix black sesame seeds and dried cranberries into the second batch. Lastly, mix shortbread crumbs, toffee bits, and chopped pecans into the final part.
Fill and stack each cake according to flavors with the appropriate buttercream as follows:
Funfetti (bottom) → sprinkled buttercream
Matcha → Black sesame seed + dried cranberries buttercream
Chocolate (top) → shortbread, toffee bits, and chopped pecans buttercream
Crumb coat each cake with the plain buttercream you set aside then let the cakes chill until firm.
Use lollipop sticks as dowels for extra support in each cake (to make 3 tiers). Stack them from largest at the bottom to the smallest at the top.
Ice around the sides of the cakes then add the KitKats on side by side. Start with the top tier and work your way down. Chop up some of your KitKat and sprinkle them on top.
Dress your cake with a cute ribbon wrapped around each layer and add a cake topper for some extra flair!
