Prepare Chip’s Handle
Before we start with the cake, it’s a good idea to prepare your handles first, as it takes the longest to dry and set. Roll out a tube of gumpaste and send a 22 Gauge wire through it, twisting as you go in. Once the wire is in, bend your gumpaste handle, sculpting it to look like the shape of a teacup handle. (The distance between the top and bottom should be about 4 inches in length.) Make sure to work quickly, because gumpaste tends to dry out very quickly and develops a “crust” on top. Repeat this process a couple times, just in case - it’s always good to have extra handles to work with! Set aside in a cool, dry place.
Note: Make sure to complete this step at least 2 days BEFORE assembling your cake to allow enough time for the gumpaste to set. The longer the time you allow gum paste to dry, the easier it is to handle.
