Yo's Blueberry Buttermilk Muffin Cake
No Mixer Needed!
This is one of my favourite muffin recipes. I bake these all the time with crumble on top. It never lets me down.
*Note: This recipe makes three 8 x 3" round pans or approximately 4 lbs of batter.*
** Caking Tip: If you cannot find buttermilk, simple leave 2 cups of milk at room temperature. Pour in 2 teaspoons of white vinegar and allow to sit for 30 minutes. Stir the mixture and its ready to use.**
