    Lemon Shortbread Bars

    Easy Peasy, Lemon Squeezy!

    For the Crust

    1 cup unsalted butter, room temperature

    2 cups sifted flour 

    ½ cup icing sugar 

    ½ tsp salt 


    For the Filling

    ¾ cup freshly squeezed lemon juice 

    2 tsp lemon zest (5 lemons)

    4 eggs + 1 yolk 

    1 ¾ sugar 

    ⅔ cup flour

    Electric stand mixer Add to Cart -

    Crust

    Mix all your ingredients together in a stand mixer fitted with a paddle attachment or a food processor. Once you get a crumb like consistency, press it into a prepared pan. Bake for 15 minutes at 350 degrees Fahrenheit. 


    Filling pt. 1

    Sift your flour into a stand mixer then add sugar and the lemon zest. 


    Filling pt. 2

    Whisk your eggs then add them into the dry ingredients. Whip it up using the whip attachment then pour in lemon juice. Whip until completely incorporated. 


    Put it all Together

    Pour your mixture onto the baked crust then bake again for 40-45 minutes at 350 degrees Fahrenheit.
