Jyoti's Cosmic Brownies

These Brownies are out of this World!

This Cosmic Brownies recipe by Jyoti (@thepurplecupcake_) will take you to the moon and back! Inspired by the school snack fave, these delicious brownies are super easy to make and absolutely delicious.

Brownies
85g unsalted butter, melted
185g granulated sugar
2 eggs
1 tsp vanilla
65g flour
50g cocoa
pinch of salt
2-3 tbsp milk
Bit chips

Ganache
100g dark chocolate
100g milk chocolate
1/2 cup heavy cream

Mixing Bowl
Parchment Paper
Offset Spatula
Rubber Spatula
Electric Hand Mixer

Prep

Preheat your oven to 325 degrees and line a 9x9” pan with parchment paper.


Sugar and Butter

In the bowl of a stand mixer, combine melted butter and sugar - mixing with the whisk attachment until combined and light in color.


Add the Egg

Add in the egg and continue to mix until the mixture is pale and light. 


Dry Ingredients

Add the cocoa, flour, and salt mixing until just combined. Add milk and vanilla and whisk until the batter is slightly looser, and well combined


Bake

Spread the batter into your prepared pan, and bake for 20-25 minutes. Remove from oven to cool.


Ganache Time

To make ganache, warm 1/2 cup of heavy cream, and pour it over chocolate. Let sit for 5 minutes.


Whisk It All

Gently whisk the cream and chocolate together until combined.


Pour the Ganache

Once brownies have cooled, pour ganache on top and spread with an offset spatula.


Bit Chips

Sprinkle bit chips over the top and place brownies in the fridge for 1-2 hours.


Cut the Brownies

Once set, cut brownies with a warm knife, cleaning the blade between each cut.
