Prepare your muffin tin with cupcake liners and preheat your oven to 350 degrees. Prepare your cupcake batter. Bake for 15 - 17 minutes, or until a toothpick comes out clean.
Remove your cupcakes from the tin and place them on a wire cooling rack. Let them cool completely before frosting. Set aside.
Finely chop your chocolate and place in a stainless steel bowl.
Add butter and corn syrup to the chocolate, and set bowl over simmering water.
Once the ingredients have melted together, stir them gently with your spatula and set your sauce aside to cool.
Pipe vanilla buttercream on top of cupcakes, using a #806 tip.
Using a spoon, pour chocolate sauce over your cupcakes
Top your cupcake sundaes with a sour cherry, or a fresh one, and sprinkles! Finish with a tiny plastic spoon.
