Easter Mini Egg Mega Cake

This Lavender Infused Coconut Cake Will Get You Egg-cited For Easter!

Easter is right around the corner and SOME BUNNY NEEDS CAKE! If you are that BUNNY, you'll love this Lavender Infused Coconut Mega Cake topped with Mini Eggs.

To make this rectangular mega cake I stacked multi colored layers of my coconut cake that have been soaked with lavender simple syrup; iced it with a pretty purple and white design of my Italian meringue buttercream; and topped it off with assorted Mini Eggs in a beautiful pattern on the top. And let's not forget the chopped Mini Eggs I added for a more rustic look along the bottom. I even added decorative purple and gold bunny cake toppers made with gum paste. With Mini Eggs in every slice this cake is worth getting Egg-cited for!

Bake Cakes

Prepare the 18 lb portion of Yo’s Coconut Cake. Separate the batter into 3 equal 6 lb portions.

Dye one 6 lb portion of batter light green using Wilton Kelly Green Icing Color. Dye one 6 lb portion of batter light yellow using Wilton Lemon Yellow Icing Color. Dye the last 6 lb portion of batter light pink using Wilton Soft Pink Icing Color. All colors should match the pastel Cadbury Mini Egg colors.

Spread each color of batter into a separate 11” x 15” rectangular cake pan. Bake at 350 degrees for 35-40 minutes, or until a toothpick inserted into the centre comes out clean. Let cakes cool completely in their pans.

Prepare The Simple Syrup

Combine the sugar, honey, water and dried lavender buds in a pot and bring to a boil. Let cool completely, then strain to remove the lavender. Set aside.

Prepare Buttercream

Prepare 2 batches of Yo’s Italian Meringue Buttercream. Set aside.

Prepare & Level Cakes

Remove all of the cakes from their pans. Level them so that all the cakes are the same height. Remove the caramelization from the bottom and all 4 sides of each cake.

Cut Cakes

Using a ruler, cut each cake in half lengthwise.

Simple Syrup Cakes

Use Sir Squeeze A-lot to soak all the cakes with the honey lavender simple syrup.

Build The Cake

Stack the cakes together with a thin layer of Yo’s Italian Meringue Buttercream between each. Start with a yellow cake layer, then add green and then pink. Repeat this pattern twice until all the cake layers have been stacked.

Crumb Coat & Chill

Crumb coat and chill the cake for 20 minutes.

Ice Again

Once chilled, check that the cake is level with a ruler, then ice again. Use a tool to smooth the tall sides. Chill once again for 20 minutes.

Note: The standard bench scraper is too short for this cake, so you can use an unconventional tool. Just make sure it is a food safe tool! To see how I did this step, please see the video here.

Prepare Buttercream To Decorate The Outside

Take one cup of Yo’s Italian Meringue Buttercream and dye it a lavender color using Wilton Purple Icing Color. Fill one parchment piping bag with the lavender buttercream and another with white buttercream.

Cut a small hole in the tip of each piping bag.

Apply The Buttercream Pattern To Cake

Pipe a series of horizontal lines of the lavender colored buttercream across each side of the cake. Use a straight palette knife to smooth the lines and blend them into the buttercream a bit. Chill the cake briefly and repeat this process, this time piping white buttercream lines and smoothing them.

Note: Do not smooth the colors too much, or you will lose the distinction between the lavender and white colors. To see how I did this step, watch the video here.

Prepare Gumpaste

Dye gumpaste a deep Cadbury Purple using Purple Wilton Icing Color. Prepare a couple of paper bunny templates. Roll out a layer of purple gum paste on a non-stick board with a small fondant rolling pin.

Cut The Bunny Toppers

Place bunny shaped templates on top of the gum paste and use a sharp knife to cut out the shapes.

Note: You can also cut a few gum paste silhouettes of just ears or just heads of the bunnies. These will look like the bunnies are hiding in the Mini Eggs when they are place on the cake. To see how I did this step, please see the video here.

Wire The Cake Toppers

Insert a 24 gauge gold floral wire into the centre of each bunny from the bottom upward. Dry completely.

Paint The Top Of The Cake

Make sure the cake is very well chilled for this step. Mix gold luster dust with clear food grade alcohol to make a liquid gold paint. Use a thick brush to brush gold on top of the entire cake, allowing it to drip down the sides.

Top The Cake With Mini Eggs

Separate the Mini Eggs by color into 4 separate bowls. Line the eggs up in rows on top of the cake, using a repeating color pattern of blue, pink, yellow, green. Continue row by row until the top of the cake is completely covered with eggs.

Create A Mini Egg Bottom Border

Carefully chop some Mini Egg in half using a Chef knife and cutting board. Press them gently into the buttercream all along the bottom of the cake.

Paint The Bunny Cake Toppers

Make a thick gold paint mixing gold luster dust with clear food grade alcohol. Use a fine tipped brush to paint just around the outside edges of the bunny silhouettes. Allow the paint to dry for 10 minutes.

Place The Bunny Toppers On The Cake

Place the bunny toppers carefully on top of the cake, using the 24 gauge gold wire to anchor them in.
