Ombre Teal Vanilla Cake With A Flowing Fondant Gown

Prepare Vanilla Cake Batter

Prepare an 8 lb portion of my Ultimate Vanilla Cake batter.

Make It Ombre

Divide your batter into these portions, dye it, and pour it into the corresponding pans:

1 lb batter - ½ drop food colouring - 5” round pan
1 lb batter - 1 drop food colouring - 6” round pan
1 ½ lb batter - 3 drops food colouring - 7” round pan
2 lb batter - 5 drops food colouring - 8” round pan
2 ½ lb batter - 12 drops food colouring - 9” round pan

Bake Cakes

Bake your ombre aqua vanilla cakes at 350º as directed below, or until a toothpick comes out clean. Allow to cool completely on a wire rack. Do not remove cakes from their pans.

5” round cake - 30 minutes
6” round cake - 40 minutes
7” round cake - 50 minutes
8” round cake - 1 hour
9” round cake - 1 hour and 10 minutes

Prepare Italian Meringue Buttercream & Simple Syrup

Prepare your Italian Meringue Buttercream and your Simple Syrup so that they’re ready to go once your cakes are cool.

Remove Cakes & Level

Once cakes are completely cool, remove them from their pans. Using a ruler and serrated knife, level the top and remove caramelization from the bottom of each cake.

Simple Syrup

Lay out all of your cake layers on your working surface, and give them a simple syrup shower. Allow to soak in completely.

Find Your Center

Use your ruler to mark the center of all five cakes, and remove the center with a 1 ½” circle cutter. This will give Barbie a comfy space for her legs once we add her to the cake.

Fill With Buttercream & Stack

Use a small offset spatula to spread a layer of Italian Meringue Buttercream on each layer of cake as you stack them, trying to keep it away from your center circle cut out. Use a small icing spatula to scrape away any buttercream that happens to slip in. You’ll be stacking your cakes from largest to smallest, ensuring that the center cut stays centred with each layer. You need those holes to line up to form one long secret chamber.

Chill

To help the buttercream firm up, move your cake to the fridge for a 20 minute chill.

Carve An A-Line

Remove your cake from the fridge, and use a large serrated knife to carve the cake down from the top into an a-line shape. Be sure to remove all the caramelization from the sides while you do this - we don’t want Barbie to have a dull dress! Make sure that the topmost layer of cake will fit her waist nicely.

Give The Gown Movement

To recreate the natural folds and flow in Barbie’s gown, take your large serrated knife and make small vertical grooves all the way around the cake. Don’t make them too perfect. They’re not pleats.

Crumb Coat & Chill

Once you’re happy with the shape of your gown, use a small offset spatula to apply a thin layer of buttercream all the way around the cake. Take your time to get into the grooves of your gown with your spatula.

Roll Out Fondant

Dye your fondant the lightest shade of aqua to match your topmost layer of cake. Sprinkle your working working with icing sugar, and roll it into a ⅛” thick slab large enough to cover your gown completely.

Drape Fondant Into Your Gown

Moving quickly, cover the cake in fondant. Play with the natural folds of the fondant to accentuate the movement of the gown, allowing it to fall just as a dress would. Don’t smooth it flush to the side of the cake.

Trim Excess

Take a sharp paring knife and trim away excess fondant at the base of the cake. Do this in a wavy motion to further recreate the flow of fabric.

Soften Edges

Use your fingers to soften the trimmed edges of fondant, occasionally pinching it between your fingers and thumb to thin it out a bit.

Create Space For Barbie

Using your 1 ½” circle cutter, trim the fondant at the top of your cake away from the secret chamber. If you notice any cracks, patch them with a bit of fondant paste made with a bit of your aqua fondant and water.

Painting The Gown

Dilute the same food colouring you used to create your aqua cake layers, and dilute it with a little bit of clear food grade alcohol. Begin by painting a dark layer around the base of the cake. Dip that same brush in another bowl containing only food grade alcohol, and begin to brush that dark line of colour up the cake, creating a lighter shade. Continue this process, blending and fading your colour upward until entire cake is covered. Set aside to dry.

Time For Holiday Glitz

Mix some pearl lustre dust, light blue pearl lustre, and some clear food grade alcohol. Apply this pearl paint to the gown, brushing from top to bottom. Let this layer dry. Then go back and paint some more pearl, just to lighten the top of the gown.

Prepare Barbie

Remove Barbie’s plastic bodice, and create a simple one out of gum paste for her. Wrap her legs completely in plastic wrap to make her food safe, and to keep the buttercream off of her legs.

It’s Time To Get Dressed Up!

Gently place Barbie into the gown, and use your fingertips to gently smooth the fondant up towards her waist. Place her plastic bodice back on her, and use a wet paint brush to blend out the seams, and really get a good fit on your gown.
