  • Prepare your modeling chocolate cheese. This should be done one day in advance to allow time to set.

  • Prepare the pound cake batter. Pour into a 9x5 loaf pan, and bake pound at 350 degrees for 1 hour and 30 minutes. Let cool in pan, and then chill in fridge for 30 minutes.

  • Knead your modelling chocolate back to a pliable consistency, and roll out sheets that are 1/8 thick on your non stick board. Cut into 4 squares, and repeat the process. Stack your cheese slices between parchment paper, so they do not stick together. Let chill.

  • With a sharp serrated knife, slice your pound cake into inch slices, and set aside.

  • Assemble your sandwiches.

  • Butter both sides, get your pan nice and hot, and fry it until golden brown. Flip your grilled cheese over, and brown the other side.

  • Place a handful of washed strawberries and raspberries in a food processor or blender.

  • Add icing sugar to taste. Strain the berries through a sieve to remove the seeds.
