THE BASICS - Carving Your Cake and How To Make Edible Dirt
What I love most about this idea is that the cakes themselves are not too hard to make. They are simply round cakes layered and then carved into the tapered shape of a pot. I then covered each tapered cake with fondant to look exactly like flower pots. The dirt on top is just a mixture of crushed whole Oreo cookies along with some of our extra chocolate cake scraps crumbled together. Now, I know you can buy pre-crushed Oreo crumbs, but this way the white Oreo icing gets incorporated so that it looks exactly like potting soil.
HOW TO MAKE COFFEE BUTTERCREAM
For an extra special treat I chose to fill my largest flower pot chocolate cake with coffee buttercream, because my mother LOVES coffee. Don't forget to watch me make my Italian Meringue Buttercream Recipe here.
In a jar, place your instant coffee, then add a bit of your hot water. Screw the lid on tightly, and shake until the coffee dissolves. If you need a bit more liquid, feel free to add - you want to create a 'coffee concentrate' of sorts that is as thick as possible and very strong, so don't add too much liquid! Once all the instant coffee is dissolved and your concentrate is ready, slowly add it bit by bit to your Italian Meringue Buttercream. Add to taste! This is hands down one of my favourite ways to flavor buttercream.
ADDING FLOWERS TO YOUR CAKE
Here's a handy tip when using fresh flowers on a cake: place plastic drinking straws into your cake and then insert the stems of your fresh flowers inside of them. This will help your flowers stand straight and keep the stems out of your delicious cake. You could also use fresh herbs, like rosemary and basil if your mom grows a food garden. Either way, your cakes will smell divine! Planting them in cake gives you an even better excuse to stop and smell the roses :)
Even after 15 years of seeing me make cakes in all shapes and sizes my own mother can't seem to tell the difference! I think she was excited because she thought I’d gotten her potted flowers for Mother’s Day, and then even MORE excited when she realized they were cakes. I've decided to take this is the ultimate compliment!
BAKING A CAKE...IN A FLOWER POT!
Here’s a another caking tip: if you’re not comfortable working with fondant, or simply want to cut down on prep time, you can actually bake my chocolate cake recipe directly in a terra cotta flower pot! That’s right, because terra cotta pots are fired at such high temperatures, they can withstand the heat in your home oven. How awesome is that? All you need to do is grease and line your pot with parchment paper (this makes sure that none of your yummy batter escapes out of the drainage hole), and continue as if you were baking in a pan.
