For the Rice Krispies Marshmallow Fluff Sandwich and Salty Sweet Loaf

 

Ingredients & Tools

1/4 cup unsalted butter
250 g pkg mini marshmallows
5 cups Rice Krispies cereal
1 cup broken salted pretzels
1 cup sweetened shredded coconut
1 cup semisweet chocolate chips
1/2 cup caramel squares, chopped
1 jar Marshmallow fluff
1 jar caramel or Dulce de Leche

Wooden spoon
Rubber spatula
Chefs knife 
Paring knife
1 large pot
2 x 10 inch square pans
Loaf Pan
Rolling Pin
2 large mixing bowls
 

I happen to love Rice Krispies squares. They remind me of childhood. They are sweet, crunchy, light and airy. Four qualities that can cause a person to eat the  
whole pan. Guilty! 

 

 

But sometimes you need a little indulgence in your life. So we are taking Rice Krispies squares to the next level. By adding pretzels, coconut, chocolate chips, and caramels we are giving these squares everything that is indulgence. Salty, chocolatey, sweet, and chewy. Every craving is satisfied with one square…but in this case we are going to throw the idea of 'square' out the window and turn our Rice Krispies mixture into yummy sandwiches and a loaf (:  Let's get started! Line two 10" x 10" square baking pans with parchment paper on the bottom. Butter the sides.  Combine the Rice Krispies and pretzels in a bowl. Combine the coconut, chocolate chips, and chopped caramels in another. In large pot over low heat, melt your butter. Add marshmallows; stir until melted and remove from heat.

Add your Rice Krispies/Pretzel mix to your marshmallows, stirring until coated. Add remaining dry ingredients and stir lightly - aren't you wondering why we don't ALWAYS add coconut, chocolate chips and chopped caramels to Rice Krispies squares?

Divide mixture between your two 10 " square pans and press down.  Put aside to set for about 90 mins. Now if you like the sound of the loaf better, then set your mixture in your loaf pan, OR double up your recipe and do both!

 

 

 

For the Rice Krispies Sandwiches with Marshmallow Fluff

Once set, remove Rice Krispies from both 10" square pans. Put both slabs one on top of the other and line up carefully - time to cut these slabs into slices so we can make our sandwiches!  You can make them as big or small as your wish - I cut my slabs into 3 strips one way, and then cut each strip into 4 to give me nice rectangular slices.  Using a palette knife, spread your ooey gooey marshmallow cream on one of your Rice Krispies slices, and then sandwich with another.  Take a moment to watch that fluff ooze out the sides - HEAVEN!  Repeat until you have all 6 sandwiches complete.  If you can go through this process without eating one, I commend you.   Place your sandwiches on a lovely platter, and serve them with a ramekin of Dulce De Leche on the side for dipping.  I can hear your gasp. "But Yolanda, you are taking this too far!" No, I respond, it's never too far. 

 

 

For the Rice Krispies Loaf

Alternatively, if you want to serve this dessert in a more sophisticated manner, set your mixture in a loaf pan. Once set, turn it out onto a platter - time to top this baby! Take your jar of Dulce De Leche and pour it all over the top until completely covered.  While the caramel is still wet, use your extra pretzels, coconut, caramels and chocolate chips to take this loaf to the next level of delicious. Once caramel has set slightly, cut your loaf into equal slices - EQUAL. Everyone should get a slice (: Whichever version you choose, you will have a winner on your very sticky hands.
